Kasia’s Omelet

  • 2 whole eggs (organic)
  • 3-6 egg whites (organic)
  • 2 TBSP almond flour
  • 2 TBSP skim milk (organic)
  • Unsweetened apple sauce (organic)
  • Strawberries, blueberries, raspberries (organic)
Mix the eggs and almond flour with a hand mixer in a bowl. Add milk. Mix again.
Pour the mixture on a non-stick frying pan. Cook on medium high heat and spread mixture around the pan until it sets.
Flip the omelet! Turn down heat and cook for 1 more minute.
Serve with blueberries, raspberries, diced strawberries and unsweetened apple sauce.

MK’s Breakfast Special (Sunnyside Up Sandwich)

Inspired by and created for one of my amazing clients
  • 1 slice of whole wheat bread (I recommend Ezekiel)
  • 1 whole organic egg
  • 1 TBSP of hummus
  • 1/3 cup of chopped spinach
  • Red pepper flakes
Toast the bread.
Fry the egg on a non stick frying pan
Layer hummus, spinach, egg on top of bread (in that order)
Sprinkle with red pepper flakes
